PEANUT. BUTTER. NICECREAM. This is a TWO ingredient recipe for all peanut butter fans out there (ME). For those who don`t know, nicecream is a vegan, dairy free alternative to regular ice cream using frozen bananas. I first discovered this after going dairy free because I was craving ice cream and while the dairy free variety for ice cream is wonderful as well as delicious, I wanted something less processed and more wholesome. That`s when I stumbled across my now favorite way to indulge in a healthy, wholesome way!
Just as some background knowledge, you are going to want your bananas to be RIPE. That means bring on allllll the spots. The more spots on the banana, the better! This is when they are most ripe and therefore provide amazing sweetness. You do not want to freeze unripe bananas- the nicecream will not be good nor sweet, trust me.
Bananas are wonderful fruit to EAT as well. They are great for an energy boost, good digestion, antioxidants, fiber, potassium and much more. I`ve heard that many people actually stay away from bananas because they are higher in calories and carbs but people listen! The carbs they have are what give you NATURAL energy and while they are higher in calories, if they make you and your body feel good and strong- then that is all that matters!
This literally only takes two ingredients and a strong blender or food processor to satisfy your sweet tooth AND because of how filling and nutrient dense this is, you can enjoy this nicecream as Breakfast, Lunch, Dinner, Dessert or even as just a snack! This is so creamy and peanut buttery and delicious I know anyone can (and will) enjoy this.
- 3 Frozen Bananas (preferably frozen overnight)
- 2-3 tbs. of PB 2 peanut powder
- A strong blender or food processor (I use this one)
- creamy natural peanut butter
- coconut milk or H2O (a splash helps blending)
- Toppings of your choice! Fruit, Nuts, Maple syrup, maybe some chOcoLate 😉
Place the frozen bananas into the blender and press “puree” option or which ever has the strongest blending power on your blender.
You will most likely need to stop to scrape down the sides, this is where the optional coconut milk or water comes in. Just add a splash if you are having trouble getting the bananas to a creamy consistency. Blend until the bananas turn very thick and creamy.
Add in the PB 2 peanut powder and mix in with a spoon before continuing to blend for 20-30 seconds just until fully incorporated.
Spoon into a bowl, top with your favorite ingredients and you are good to go! I swirled in some all natural creamy peanut butter, topped with a drizzle of maple syrup and added my favorite home made pumpkin balls chopped up on the side. It was AMAZING. You can really play around with nicecream which is something that I just love. So go and get your peanut buttaaa on and enjoy!
