This. This is my new favorite go-to breakfast, snack or sweet treat. This chia seed pudding is FULL of good for you nutrition like fiber for good digestion and cinnamon for blood sugar control. This is one of those things that tastes so good you feel guilty- with absolutely nothing to be guilty about!!
For the thickener (milk) in this recipe I used Silk Almond Nog. It adds such a creamy texture and subtle sweet taste. You can definitely switch the milk and add vanilla extract but the Almond Nog is seriously amazing, plus added holiday spirit! I layered my chia pudding with decadent date caramel (hello added fiber!), pecans and of course, coco whip. The coconut whip cream also adds a wonderful element of sweet and creamy- it`s heaven in your mouth. You can definitely top with whatever suits your taste buds, but the date caramel with the whip cream brings out the spiced flavors and I 100% recommend.
This is SO easy and perfect as an on the go meal and keeps you full for hours after eating it. This recipe will have you feeling in the holiday spirit without all the guilt or consequences of bad for you holiday foods.
BONUS- You can make one giant batch and then divide into small serving cups and layer with whatever (fruits, nut butters, coco whip, nuts) and take to a holiday Christmas party! This recipe is dairy free, gluten-free and vegan so it easily satisfies dietary needs.
RECIPE FOR HOLIDAY SPICED CHIA SEED PUDDING
- 2 tbs Chia seeds
- 1/2 cup of Almond Nog (link above!)
- 1/4 tsp Cinnamon
- 1/8 tsp Nutmeg
- Optional- 1/2 tsp coconut sugar
HOW TO-Mix all ingredients in mason jar, portable container or bowl. Set in fridge and stir a few times after 15-20 min. Let sit in fridge overnight, add toppings and enjoy the next morning!
