PEANUT BUTTER CHOCOLATE CHIP DATE BALLS! (Only 3 Ingredients, Gluten free and Vegan!)

If you are looking for a super delicious snack that is easy to whip up, these date balls are definitely for you! Snacking is something that is just inevitable for me and knowing that, I want to make sure I am choosing healthy foods that benefit my body instead of things laced with all kinds of weird ingredients, extra sugars and just plain unhealthy things. But.. I also do not want to snack on something bland and leaves me unsatisfied. That is when I decided to make some of my very own Peanut Butter Chocolate Chip Date Balls! These are wonderful tokens of energy that are also very flavorful and very easy for a college student like myself.I can easily just eat a few in between classes and it keeps my unhealthy cravings down. I was inspired to create ย my date balls by these Larabars:ย Larabar Gluten Free Bar, Peanut Butter Chocolate Chip, 1.6 oz Bars (16 Count). They use such simple ingredients in all their bars and they are always so delicious! As you can see I tried to recreate the flavor in this recipe and I think they turned out SO GOOD! (Also packed with fiber!!!)

Not only does this recipe only require 3 ingredients, it is also gluten free and vegan so it works for everyone! The dates make this a naturally sweet treat and give a great boost of energy and the dark chocolate chips give a delicious crunch… MmmMmmm.

Ingredients:

HOW TO-ย 

First, place the peanuts in your food processor or Nutri Bullet and pulse a few ties until crumbly. Then place all the dates in your cleaned food processor and process until it turns into a dough like form and then add in the peanuts, pulsing just a few times to incorporate. Scrape the mixture into a medium bowl and then fold in the chocolate chips!

For the rolling part I recommend wetting your hands just a little bit. Simply roll the dough into balls and place in a level surfaced container and place in the freezer until you are ready to eat them! I recommend leaving them in the freezer for 45 minutes to let them really firm up! Just a reminder- a lot of people do not eats dates due to their high sugar and caloric density. While they are higher in these things, a whole food with natural sugar will always have better affect on your body then fake, processed sugars. Be mindful of what you put into your body and focus on the quality over the calories as well.ย 

These are sweet, crunchy yet smooth, chocolately and peanut buttery (is that a word? Just go with it.) BASICALLY everything I want in a snack or even as a healthy dessert!
