CARAMEL COCONUT CREAM PARFAIT

Hey everyone! Today I am bringing you a recipe for a super delicious and super creamy treat! This is an oat based parfait full of coconuty and caramel goodness. The best part is I used date caramel to make this so you do not have to feel guilty for added sugars or anything unhealthy! I love date caramel, it is a great way to utilize natural foods produced by the earth to re create a classic flavor. Dates naturally have a caramel flavor that produce thick and sweet caramel! If you do not know how to make it, no worries I explain it before the recipe. Also oats and dates are both high in fiber, this will definitely keep you full and satisfied. This is also vegan, dairy free and gluten free 🙂

I was at my boyfriends house (watching tv but actually thinking about food) when I was inspired to make this, as always, I was craving something sweet. Typically I don`t go for caramel things but the idea of mixing it with creamy coconut just was like a tiny mind blowing moment. So that is what brought me to this parfait creation! And yes- parfaits typically have yogurt, but I promise these sweet over night oats used do not disappoint!

PREP-

  • For the overnight oats, mix 1/2 cup of old fashion oats with 1/2 cup Unsweetened Coconut Milk. I use the Silk brand because they are also carrageenan free!  You just want to mix the ingredients in a container and let sit overnight.
  • For the caramel sauce, you will need 6 dates, 1 tbs of MaraNatha – Raw Almond Butter Creamy All Natural – 16 oz. and some water.
  • Let the dates soak in warm water for 10 minutes. Then in a high speed blender add the dates, almond butter and the water they soaked in as needed to get the consistency you want! The less water, the more thick and the more water the thinner the caramel! Totally up to preference.

Other Ingredients:

  • Toasted Coconut
  • Coconut Cream from a can of coconut milk
  • Sliced Bananas

HOW TO-

It is SO simple! Use a mason jar and place a layer of caramel at the bottton, next place a layer of oats, then a layer of toasted coconut and repeat! Scoop the coconut cream out of the top of a can of coconut milk and top the parfait with that, sliced bananas and more coconut! Viola, dessert for breakfast achieved in a sweet, uber creamy delicious, filling AND healthy treat! Enjoy!
