This is a great option for breakfast, giving you THREE servings of fruit, a whopping serving of fiber and Omega-3`s and it is also the perfect amount of sweetness. This is kind of my way of prepping for summer- I am not saying bye to hot oats, just saying I seriously cannot wait for all the refreshing, cold nice cream days ahead. I hope you all enjoy this easy breakfast recipe and let me know what you think! Who could say no to ice cream for breakfast…. (not me.)
- 2 Frozen Bananas
- 1 cup Frozen Berries
- Splash of Coconut Water
- Chia Pudding
- Handful of my SIMPLE HEALTHY RAWNOLA
In a high speed blender, blend the bananas, berries and coconut water until it is thick and creamy. I use a Nutri Ninja Ninja Blender Duo with Auto-iQ (BL642) and use the “Puree” setting. For toppings, I layered chia seed pudding at the bottom, (3 tbs chia seeds, 1 cup liquid), with blackberries and rawnola at the top! You can pair this with so many different things and customize it! Enjoy!
