What is upppp people! Today I am sharing what I ate today, and like the title says, it is based off being busy, in college, balancing life and staying healthy! Lets get to it! BTW not all these pics are pretty and thats ok 🙂
*Alarm goes off at 5:45 am. THAT IS TOO EARLY. But it semi motivates me and makes me feel like an adult, so 5:45 it is. 6 am I start with a big glass of water!
7 AM- Omelette + Toast
I have a long stretch between breakfast and lunch so I try to make it filling food! 1/2 cup of egg beaters to make my omelette with one slice of Udi’s Gluten Free Whole Grain Bread 2 pack with a bit of vegan butter and blackberry jam! And yes a side of coffee, anyone who gets up at 6 deserves some coffee. *This is my FAV VEGAN CREAMER:Califia Farms Almond Milk Coffee Creamer, Vanilla, 32 Fluid Ounce (Pack of 6)
12:30 PM- Salad + Fruit
These are some nice pics from the hospital cafeteria *not. I pack my lunch with me and skip the cafe food to make sure I don`t make a hasty food decision. In my salad- Romaine, Half an avocado, Pepitas, some raw brussel sprouts and Zesty Lime vinaigrette:Kraft Zesty Lime Vinaigrette Dressing, 16 Fluid Ounce! Fruit combo- One apple, dried apricots, blueberries and blackberries sprinkled with cinnamon. mmmmmm yes.
After the hospital shindig, I eat, study and head off to an appointment!
2 Pm- Venti Passion Tango Tea, no classic syrup and sugar free vanilla instead + almond milk! Okay 1. I tried really hard to resist starbucks but passion tea has been my STUFF recently. 2. I wanted it a bit more creamy so I added almond milk (purple drink?) and they gave me this weird looking concoction thing but hey it was good.
3 Pm- Fuel for a 3 hour class- A Curate Kids Oatmeal Chocolate Chunk granola bar: Curate Kids Oatmeal & Chocolate Chunk, 5 Little Bars They are so yummy and are chocolatey and gooey and crunchy and yes.
7 PM- DINNNAAAA
Finally home!!! I created vegan mexican tacos. Tofu continues to amaze me and all the different flavors and dishes I can make with it! So yes- tonight was TOFU TACOS. Vegan, delicious, plant based and full of goodness. Like this if you want the recipe!! (You do.)
15 Minutes Later- Dessert
I always crave sweets after dinner, can`t help it or resist it. SO one apple cinnamon rice cake with 1 tbs of peanut butter, a sprinkle of my fav dairy free chocolate chips: Enjoy Life Dark Chocolate Morsels, 9 Ounce and a drizzle of honey!
Sooo now I am off to squeeze in a work out, do more homework and studying yayyy! I was out of the house from 7:30 am to around 6:30 pm and managed to keep up with my cravings by having good fats, carbs and protein(ish) with my meals (as well as snacks) and not saying no (but YES) to craving chocolate, peanut butter or some sweet tea! I may end up having a cup of tea later just because I always love studying with some hot tea like decaf chai or peppermint. (good with digestion!)
