VEGAN TACOS. Plant Based + Gluten Free!

Happy Tuesday everyone! Today we are celebrating taco Tuesday with this awesome vegan taco recipe! I mentioned this in my post WHAT I EAT IN A DAY: Busy College Student! as one of my easy dinners I make and love. Now this is definitely something you can add personal preferences to (this is a fantastic base recipe) but get creative if you want, add some tomatillo sauce, peppers, veggies, whatever!

Ingredients:

  • Block of Extra Firm Tofu (I like the brand Nasoya!)
  • Spices: Cumin, Smoked Paprika, Onion Powder, Garlic Powder, Salt, Black pepper
  • Liquid Aminos 16 oz. 16 Ounces
  • Olive Oil Spray
  • 1 oz. Mushrooms
  • 1/4 Onion

PREP:

For the tofu you will want to press it before making it. Take the tofu out of the water and place it on a plate. Take another plate, flip it upside down and press until the liquid comes out then drain the plate and repeat until the tofu is as dry as desired. Here is a visual: Press Tofu

After you are done pressing, soak the Tofu in liquid aminos for 10-15 min.

HOW TO:

Heat a skillet on medium heat and coat with olive oil spray. Crumble the tofu with your hands and combine with spices until you have your desired taco meat taste. I didn`t do measurements because I feel like everyone prefers different spices. For me I use a lot of cumin and onion powder for a sweet savory flavor! Then, mince the mushrooms (finely chop them) and the onions, place onto the skillet until half way cooked through then add tofu. Cook until the tofu edges are almost crispy, tuck into a corn tortilla, add toppings (lime and romaine go so good with this) and eat up! If the skillet seems dry add some liquid aminos to help cook them and add further flavor.Matcha Source for matcha green tea powder

For the corn tortillas, I like to just heat them up on the stove top after I make the taco meat so they soak up the left over flavor 😉 Also! Quick Tip- If you do not want to use a whole block of tofu (because it makes a lotttt), cut off how much you want and then you can save it by placing it in a deep dish tupper ware container and filling it with water! Store in the fridge for up to a week.
